delish dessert: chocolate cake with cream cheese icing

Chocolate cake with cream cheese icing is my favorite cake.  I made one over the weekend for a friends birthday and let me tell you, it was divine!  I added a tiny bit of coffee to this version and it added a new layer of flavor. 

Chocolate Cake:

2 cups cake flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsweetened cocoa powder

1 3/4 cups granulated sugar

1/2 cup unsalted butter, very soft

1/3 cup olive oil

1 teaspoon vanilla extract

1 cup milk

1/2 cup brewed, cooled coffee

4 large eggs

Preheat the oven to 350 degrees.  Prepare two 9" round cake pans with flour and butter or spray with a non-stick spray.

In a large bowl, sift flour, baking powder, baking soda, salt, cocoa and sugar.  

In another bowl, add butter and mix for 1 minute.  Add oil and mix for 30 seconds.  Add eggs, one at a time. After each eggs addition, beat mixture for 30 seconds.   

In a measuring cup, combine milk, coffee and vanilla.  

Add a cup of flour mixture to butter/egg mixture.  Mix for 30 seconds.  Add a 1/3 cup of the liquids (milk/coffee/vanilla). Alternate adding flour mixture and liquid mixture to the butter/eggs until all ingredients are incorporated. Once all ingredients are mixed, divide batter between the two 9" round cake pans.

Bake for 28-30 minutes.  The cake is done when a toothpick inserted in the center comes out clean.  Cool on a rack before frosting.

Cream Cheese Icing

2 8 ounce packages of cream cheese, room temperature

1/2 cup butter (1 stick), room temperature

1 1/2 cups powdered sugar

1 1/2 teaspoons vanilla extract

1/2 cup milk

Beat cream cheese and butter in large bowl until smooth. Add powdered sugar and vanilla and milk; beat until smooth.


Place cake layer, bottom side up, on a platter.  Spread with 1 1/2 cup frosting.  Top with second cake layer, bottom side down.  Spread remaining frosting smoothly over tops and sides.  Enjoy!
