Easy, tasty side dish

Potatoes and onions are a family staple.  It's easy, tasty and fast.  It goes well with grilled or roasted foods.  You can make it on the grill or in the oven.  It's also a great dish to take to pot lucks because it travels well.  This version, I roasted in the oven for dinner at a friend's house.

Potatoes and Onions

2 lbs new potatoes-(red, white and purple), scrubbed and sliced thinly

1 large sweet onion, sliced thinly

1/4 cup olive oil

2 tablespoons of butter

1 teaspoon salt

1 teaspoon freshly ground pepper

Preheat oven to 400 degrees.  Toss potatoes, onions and olive oil in a bowl.  Spread in a pan that is microwavable.  Salt and pepper.  Sprinkle two tablespoons of butter over potatoes.  Microwave potatoes for ten minutes.  When done, roast in oven for twenty minutes or until potatoes golden brown.  Serve immediately.

Potatoes 2Second step, slice pototoes into thin medallions. Potatoes 3Steps 3-5: toss ingredients in a bowl, spread in a pan, add salt, pepper and butter. Potatoes 4Finito and ready to serve.
